Fuss Free - No Baking!
As someone who usually throws everything into a bowl and creates a cake by tasting rather than measuring ingredients, I was recently prompted to write out my recipe for these brownies when a friend asked for it. This one is simple, quick and easy to follow, just the way I like it! They are gluten, dairy and egg free and can be made in 15 minutes with some practise and all of the ingredients (except the vanilla rice protein powder) are available in most supermarkets including Aldi making it very accessible to everyone.
Hormone & Blood Sugar Balancing
These tasty brownies are made with hormone and blood sugar balancing ingredients. They provide fibre that feeds the "microbiome" which is your gut flora or basically your in-built probiotics (regular followers will know the importance of our microbiome!). They also contain protein, healthy fats, are high in antioxidants and are loaded with micro nutrients such as Vitamin E, iron, zinc, calcium and magnesium. You can learn more about the health benefits of cacao here.
Healthy Treat For Kids
This is a good lower sugar alternative treat for kids though the cacao content may be too rich in flavour and substituting with cocoa powder may be more acceptable to some children's palates. Please note, however, that if you do swap, you will lose some of the nutrients and the sugar content may be higher.
I really hope you enjoy them as much as I do and please share the recipe with your friends!
Ingredients (Makes 15)
100g desiccated coconut
100g ground almonds (or almond "flour")
50g cacao powder (or swap for cocoa powder)
25g flax seeds (milled/ground)
50g coconut oil (melted)
50ml maple syrup
125g dates (soaked and blended)
1 tbsp cashew nut butter (substitute almond for a "deeper" flavour)
1 tsp Nua Naturals vanilla rice protein powder (available in health stores)
Directions
Place the dry ingredients (coconut, ground almonds, cacao powder, flax seeds and vanilla powder) in a glass bowl.
Add all remaining ingredients (coconut oil, dates, cashew nut butter) and mix them together with a wooden spoon.
When the mixture is the correct consistency, you should be able to pat it flat into a 20 cm x 20 cm (8" x 8") glass dish or baking tray without it sticking to the back of a metal spoon.
Then simply chill in the fridge for an hour and you will have a rich and satisfying treat. Enjoy!
